WebIndex Gundyr is a good boss to learn how to play bosses and he's challenging for newbs. Learn to dodge his attacks and he'll be cake. You're probably attacking too much and at bad times. Only go for attacks after you successfully dodge one of his, it's called punishing and it's the core of Dark Souls gameplay.
